Here is the secret method of cooking perfect gyoza (fried dumplings). The dumplings won't stick to each other and are easy to separate without damaging the dumpling skin. Plus, the meat inside will be thoroughly cooked! :)

Instructions:

  1. Put some cooking oil into a frying pan and spread oil to cover the entire surface of the pan. You don't need a lot of oil to do this.
  2. Turn on the stove (use medium heat). When the pan is hot, place dumplings on the frying pan. When the underneath skin turns into beautiful foxy color, put water into the pan. Note: the amount of water is important. Put water until it reaches the half way up of each dumpling.
  3. Cover the pan with a lid. When the water boils (bubbles pop out), throw away all the boiling water. Note: if you let all the boiling water evaporate, then all the dumplings will stick together.
  4. Place the pan back to the stove and cook for a few seconds/minutes till the underneath skin turns dry and gold brown again. Take one and taste it. Just double check and see if the meat inside is cooked.
